CUPPING
Because coffee is an agricultural product, quality (taste) will vary from farm to farm and from crop to crop. We, therefore never buy
a single bag of coffee unless we have first inspected and cupped
(tasted) a sample. This helps to insure the consistency of the
coffees that we roast and sell.

ROASTING
It is our goal to unlock the full potential of each and every coffee.  Coffee roasting is not so much about imparting some "new" flavor to  the coffee, as it is
simply unleashing all of a coffee's potential. The "style" or technique that is used to roast coffee varies greatly from one roaster to the next, and greatly
affects the final taste of each coffee. Every company has their own roasting style, and ours is like no other. Our coffee is hand-roasted in small batches to  
highlight each coffee's body, to actuate its depth of flavor, and to bring out its inherent complexity.  This must be balanced with the coffee's delicate
acidity. After all, acidity is an important flavor characteristic that  helps to make every coffee unique.

QUALITY
After every single roast, each coffee is "cupped" to ensure consistency in our product, and to guarantee that each and every batch is up to our high
standards.

PACKAGING
The best coffee in the world loses its aroma and flavor if exposed to air. We eliminate this problem by vacuum packaging and gas flushing
our coffees in one-way valve bags within two hours of roasting.  This preserves the freshness for up to 6 months.  By using this
packaging technique, we are able to offer our customers the freshest
possible coffee.
